I really like Pumpkin cheesecake and found this recipe. It is really easy to make and with Thanksgiving coming up, I thought I would post the recipe here.
Pumpkin Cheesecake Recipe
prep time: 20 min
bake time: 45 min
cool time: four hours
What you need:
9 honey grahams finely crushed (about 1 1/2 cups)
1/2 cup of finely chopped nuts (I did not use these because I don't like nuts and it was fine)
1/4 cup(which is 1/2 stick) of melted butter
1 tsp vanilla
1/4 teaspoon ground nutmeg
4 packages (8 ounces each) of cream cheese softened
1 cup of sugar divided
4 eggs
1 cup of canned pumpkin
1 tsp of ground cinnamon
dash of ground cloves
heat oven to 325. mix graham crumbs (and nuts if you use them) and butter. press into bottom of pie pan
beat cream cheese, 3/4 cup of sugar and vanilla with mixer until well blended. add eggs one at a time while beating. remove 1 1/2 cups of batter. stir remaining sugar, pumpkin and spices into remaining batter.
Spoon half the pumpkin batter into crust, top with spoonfuls of the plain batter you separated. repeat layers, swirl with layers.
bake for 45 min or until center of pie is set. refrigerate for four hours.
